The HENDI Japanese knife Sashimi is the ideal choice for slicing fish fillets for sashimi and sushi. Its narrow blade is also excellent for skinning and filleting small to medium-sized fish. With this knife it's possible to achieve very thin, almost transparent slices with very little cell damage to the cut product.

Manufactured in Japan – traditional Japanese design. All knives from this line form a complete set for traditional sushi preparation. Blade made of Japanese stainless steel SUS 420J2. Handle made of poplar wood. Blade hardness: approx. 53 HRC. Not dishwasher safe.
